Reviewed Mexican Rice Pudding (Arroz Con Leche)

Rice pudding is my favorite comfort food when I'm sick. This version is rich, creamy and decadent. I didn't change a thing. I was glad for the video though, otherwise I would have had some concerns about how liquidy it was while cooking, but it turned out perfectly.

Did you even make this? Regardless if you feel dumping out the water is wasteful (think pasta...) and if raisins make it un-Mexican, the point of reviewing recipes is to share your opinion after you've made and eaten it.

This was a really simple yummy recipe. Gruyere was very expensive so I used aged white cheddar instead and leftover Christmas ham. Could have used half the amount of oil for the shallots. I didn't add salt- it had enough between the butter, ham & cheese. Paired with a salad for dinner and it was very filling. Will make again.""

I followed the advice of reviewers & added a pinch of salt, more pecans (didn't measure 1/2 tsp vanilla & used dark brown sugar. I did need to add foil about 45 mins into cooking baking time. This pie turned out fantastic! Tempering took a bit of time but this was a very easy recipe and I will make again!""
