This salad is FANTASTIC!!! You can follow the recipe exactly, or substitute ingredients. I like to add marinated mushrooms, or marinated artichoke hearts, or peperoncinis, or pickles just to add a little tang. You can also layer some pepperoni, salami, or prosciutto to make it an antipasto. The dressing makes this dish; YOU NEED TO USE THE ANCHO"
