Reviewed Crispy Kale "Chips"

Mar 26, 2013 in Food Network Community Toolbox on

I tried to like kale in so many ways...sauteed, in soup, grilled, all to no avail. Finally I like kale. Actually this recipe is terrific. I cooked it at 325 degrees in my convection oven for 12 minutes and it was perfect. Thanks for the recipe. "

A great recipe for many reasons. The flavors are great. I did add a garlic clove minced, sliced calamata olives and some capers. Really easy to make. AND perfect to assemble ahead of time, put in the fridge, and pop in the oven when everyone gets home. "

Really a good recipe. I have made it many times now and my family likes it. My changes: I cook the rice with vegetable broth. I saute one diced onion and one diced green pepper initially then add the garlic and follow the remainder of the recipe. For the Cajun spice I use Emeril's Essence which can be found on the Food Network website. Thanks f"

Also it should be noted that after baking the gingerbread shapes they need to be trimmed promptly because they crisp up very quickly. We never made gingerbread houses before, so we were all pleasantly surprised at our succes"

Not sure what I did wrong. My biscuits tasted great but my whole family said they were dry. Followed the recipe exactly. How would someone make them moist inside? "

Reviewed Butternut Squash Lasagna

Very good. My vegetarian daughters liked it, my carnivore husband thought it was very good. I simplified things by cooking the squash in the microwave and then scooping out the insides directly into a food processor. Also, I couldn't find appealing fresh basil at the supermarket, so I added 1/3 cup pesto to the cream sauce. It made a delicious sa...

Reviewed Potato Croquettes

Jan 2, 2012 in Food Network Community Toolbox on

Terrific way to use leftover mashed potatoes. I used seasoned panko bread crumbs, which gave them a very crispy coating. I fried the croquettes in canola oil (a little healthier). Once I finished, I reheated them all at 325 degrees for 10 minutes in the oven. They were a hit with my family. ""

Reviewed Grilled Pappadums with Spicy Lentil Dip

Jan 2, 2012 in Food Network Community Toolbox on

This recipe was very well received at my New Year's eve get together. I found it was very thick though and used about a cup of plain yogurt to thin it. My guests liked both preparations, but may have preferred the addition of yogurt. I will defintely make this again. It is a very healthy dip. ""

Very good. I had almost every ingredient on hand. At the very end I stirred half a cup of heavy cream into the vegetables to make a creamy sauce. Worked extremely well. ""
