Some jambalayas are moist and tomatoy, and some are dryer with no tomato, both versions abound across the south.

A day in the refrigerator makes almost any red pasta sauce better. I think it's the number one overlooked trick to great sauce.

Paula, I love your show, and your great southern recipes. I especially like this presentation, but CANNED cranberries, in a food network recipe? Against Guy? I'm disappointed. Cranberries are so easy to cook I can't believe you did this.

My mother in law has been making a version of this for forty years. She uses cream of celery soup and no mayo. In fact, I can't imagine using a heavier soup. Celery sounds terrible but somehow makes this dish. Tastes great, and a snap to make.
Saw the comments about the pan, we always cook this in a square casserole.
