This soup is so delicious! I used chicken stock for the base and leftover spiral ham. I rinsed the ham before I added it but it still had a little sweetness which added a nice taste!

This is the best tasting lamb I have ever made!! The mint pesto was so easy but extremely flavorful! I marinated the lamb, as I always do, in olive oil, minced garlic, rosemary and salt and pepper, prior to roasting. I will use this recipe again and again!! I served it with some roasted asparagus.
