THIS IS MONEY! I let the pork sit in the brine for 3 hours before cutting away the excess fat. Before cooking I dusted it with paprika and cayenne powder. Served it with mashed potatoes and sweet corn. Will definitely make again. Next time will use pork loin because there are no bones and will not bother with the Brie."

What a great recipe for an English staple. Being English I avoid chicken tikka In restaurants because it is too creamy and bland, but this one is tasty with complex flavours.
