Reviewed Double Orange Glazed Pork Chops

"Neither my boyfriend or I really care for pork chops usually, but I had an awful lot of citrus hanging around and for some reason my mind jumped to pork.....anyway! We really enjoyed these a lot! I used blackberry jam instead of the marmalade because that's all I had, but it gave the sauce a really beautiful dark garnet color. Somehow I ended up with a little too much oil in the pan and hence, in my sauce. Besides that everything was great! (Pay close attention to the thickness of your chops. Mine were over an inch thick so of course required quite a bit more cooking time.)

Reviewed Yogurt Sponge Cake with Fall Berry Compote

"I feel like the flavors in this turned out amazing, but as usual, my baking skills are just terrible. My cake was anything but spongy. The sauce was great. It was pretty easy to whip up, so I might try it again.

Reviewed Butternut Squash Soup

"I'm going to give a 5 - and of course I made modifications, that's what cooking is all about. For me, anyway. I use recipes more like guidelines - not rules. Anyway - this was delicious! I had a huge butterCUP squash that came in my CSA box. Had no idea what to do with it since I've never seen or heard of buttercup squash before. Actually, I think the hardest part of this recipe was peeling the squash! I added some garlic of course, because it's just second nature to me. And I used beef base and water for the stock, because that's all I had. At the end I grated fresh nutmeg on top. Fantastic base recipe for a delicious fall soup :) Yummy and pretty healthy too - just a smidge of butter.

Reviewed Fish Tacos

"I used tilapia, which I thought held up nicely, and sweet paprika in place of pimenton (I'm not entirely sure what that is, actually). Absolutely delicious and easy : Agree with another poster that you could use less oil in the cabbage. Will make again!

***I went back and looked up Pimenton and it actually IS paprika, though it's the smoked spanish version. I actually have smoked spanish paprika, but I thought the sweet hungarian tasted great. O wellz ;

About Me

I love cooking (obviously), wine-tasting, shoes, Sci-Fi, loud music, traveling, horrible zombie movies and animal rescue. I love cooking for my boyfriend and occasionally I do pretty well by his 4 year old :) My newest passions include trying out every spice known to man, and creating good, healthy, food with fresh, raw, organic ingredients.

Favorite Foods

My favorite foods are pretty random. Mashed potatoes, chicken fried steak and gravy and Tex-Mex, because I'm originally from Texas. Avocados have always been a favorite, but sweetened by the 2 years I spent in Cali. 5 years in Hawaii turned me onto Thai Red Curry (best one ever is in Chinatown), a good bowl of Saimin, and eventually Sushi/Sashimi (my current crush). Right now I'm in Washington State, and I'm digging pretty much anything local, sustainable, organic, cage-free. How very granola of me :) Just not bananas. Bananas make me queasy.
