Reviewed Baked Cheese with Chorizo
"I had to use the mozzarella cheese because I can't buy the Mexican cheese called for in Marcella's recipe. I served this last night to six people along with braised pork soft tacos, chicken fajitas, fish tacos, and pot roast tacos. everything was great but baked cheese with chorizo was the favorite. I make my own chorizo using the recipe from Cocina de la Familia by Marilyn Tausend. I also added some finely chopped red and green bell pepper when I sautéed the onions. That improves a very good recipe.
