Terrific recipe produced a terrific soup. Used ground chicken and Italian chicken sausage. The cheeses gave the meatballs so much flavor. Just delicious. Gave the carrots and celery a rough chop in the Cuisinart and threw in an extra handful of pasta. Left the spinach out to add when I warmed the soup and next time will leave the dill out ubtil the...

Loved this. The parmesan puts it over the top. Made exactly as written, next time might add swiss chard towards the end so that it retains its bright color. Can only serve to those who like a little heat. another winner, Thanks Giada

Interesting soup. Made exactly as written except for increasing cheese rind. For me, the flavor of the rosemary overwhelmed the other ingredients. I have an outstanding minestrone, thick and hearty, that everyone raves about. While this is a nice soup it doesn't stand a chance against my old tried and true
