So simple and so delicious! This method of baking the chicken produced the most tender moist chicken I've ever eaten. I added a bit of non-fat yogurt and a squeeze of lemon juice to the mayo. And for added color and flavor, I added a small chopped shallot. I probably used more tarragon that called for, but I love tarragon. "

I made this last night and was very pleased with the results. I used sweet potatoes instead of white, and thyme instead of parsley. It is so easy and delicious - a humble but satisfying meal!

Delicious! Flavorful, moist & tender. This doesn't taste like a low fat meal. I made a few changes- I used about a pound of ground chicken, but kept the rest of the proportions the same. I didn't have celery salt or ground sage, but the burgers were still full of complex flavors. I would definitely make again.
