My Activity

Reviewed Layered Cranberry Sauce

"This was the second year I made this for an entirely different group of people. They loved it too! I was making turkey sandwiches the next day and put a little on the bread. It was delicious! My husband will eat leftovers for dessert until it is gone."

Reviewed Banana-Cream Cheese Breakfast Cakes

"While we did enjoy these, I too had the same issue with using a regular muffin pan as the recipe states. After I made them and scanned the comments to see what I did wrong, I saw one of the commenters used a jumbo cupcakes/muffin pan and got the results they expected. Almost all of mine bubbled over and some of them sank in the middle. They loo"

Reviewed Lightened-Up Mac and Cheese

"We really liked this version of Mac & Cheese. The calories were the same as our extremely unhealthy version I make, but the fat and cholesterol were literally cut in half. We also ate it as a side dish so we stretched out the servings a little. I did a blend of parsley, basil and chives and I think that really amped up the taste. I like the id"

Reviewed Light Blue Cheese Dressing

"I thought this was great - once I got it right! I accidentally (and stupidly) grabbed vanilla low-fat and it was probably one of the most awful things I ever tasted. I had a bunch of Greek low-fat yogurt so I remade it and thought it was one of the best dressings I've ever had. I would definitely advise using a Greek yogurt because it gives the""

Reviewed Light Italian Dressing

"I thought this was a decent dressing, but a little overpowered by the mustard and lemon. I'm anxious to see how it tastes next day allowing the flavors to merge a little better.""

Reviewed Light Ranch Dressing

"I'm pretty picky about my Ranch dressing and usually can't stand "light" bottled versions. This was fantastic and I'll not be buying it from the grocery store again. I used an olive oil mayonnaise and it tasted fantastic!""

Reviewed Almost-Famous Spinach-Artichoke Dip

"We loved this dip. I tried to lighten it up a little by using skim milk, light sour cream and reduced-fat cheese and it still tasted great (just took a little more time to get it to thicken up).""

Reviewed Asian Egg Drop Soup

"I really enjoyed this recipe and cut down on the sodium a little by using 33% less sodium chicken broth. Be careful when using the white pepper. It doesn't show up well in the broth (like black pepper does) and I over-spiced it, for my taste at least. My husband loved it!""

About Me

I am a medical and oncology esthetician currently working for a gym in their spa.  I really enjoy cooking and am always looking for ways to slim down recipes.  I have a cooking blog that I wish I had more time to post on.  One of my pet peeves is recipe writers forgetting that not everyone can chop an onion in 45 seconds and not all of us have the cash to spend on ingredients.

Favorite Foods

I love all kinds of food and enjoy trying to cook a wide range of things.
