"I was given a chuck roast to prepare as I catered a friends' 80th birthday, and wasn't sure how to make it into a "special occasion" main dish. This recipe was a HUGE hit with the 25 people of all ages at the dinner - what a relief. I added cornstarch to the liquid after I pureed the veggies. Otherwise followed the recipe exactly, and will make it again soon! YUM!
