Reviewed Baked Rice Pudding
"This recipe is fantastic! I made it yesterday, and my husband and I finished it off today. I used Lactaid milk instead of regular milk as we are both lactose-intolerant, and I also used Splenda in place of sugar. I will make this again, and again. I would also like to try replacing the rice with blueberries, and baking them in individual pie shells, although I'm not sure of how long to bake them. Any suggestions?"

"A really wonderful recipe. I halved it because I don't have a large enough pot, and it turned out great. I did use both peppers since I had already cut them up. I served it with rice. There was lots of sauce & rice left over, and I stretched it out by adding some beer brats - a great idea. Next time I think I'll add some artichoke hearts - not marinated. I'll make this one often."

About Me
I'd been disabled for several years, and I can now cook again after having 3 joint replacements (1 more to go). I'm having a ball, and all my years of watching the food network have paid off.
