“This seems a take on my black bean salsa recipe. So I omitted the black olives and put in some green pepper instead. I also added some finely minced garlic, lime juice and more cumin 'cause we love it. the salsa I used was pretty spicy so I left out the jalapeno. It is a winner!”

“Just made this for dinner and it was great! Made a few changes, added sliced carrot and onion with the peas, clove minced garlic in the sauce, and substituted pineapple juice for the sherry.
Very tasty and quick."”

“I always thought I made good enchiladas, and I probably did, but I never made the sauce like this.
It hit it out of the park! I will never make enchiladas again without making the sauce this way.
Slightly frying the tortillas also made a difference. Excellent!"”
