MAKE THIS. It's so easy to and really did last for days. When I was finally tired of eating it as a cold salad, I sauted it, and splashed in some balsamic vinegar, a SUPER easy reinvent. I have another recipe similar to this, and I know that adding some dijon mustard and stirring in diced avocado would be great too.

Thank you for sharing your tweaks. I think I'm going to use them too if I make this.

I agree about the flavor missing the mark. I think it's a good base recipe, I love the veggies and the fact that it holds up enough to last a few days, but the dressing needs more punch. I'll make again but with changes.

As easy as it was tasty. I'm putting this recipe in my everyday dinners section.

Not just easy, super easy. Delish too. Salty following the recipe exactly. I made this twice. The first time I was nearly out of salt so I used much less than the recipe calls for. The second time I did add as much as listed and I thought it came out too salty. I've made it twice and I'll keep making it. "

This dish has wonderful flavor. Takes a little time to make, but easy. I used a little less yogurt, but it would be good with more or less. I didn't think it was an attractive dish, but who cares when it tastes this good. Thanks, Aarti, you're the real deal.

Simple to make with great flavor. So simple I'll make it when we go RV camping next time. I think the almond extract is what drives it home.""

Saw this on TV in the morning, made it that night. Easy with simple ingredients and wonderfully tasty. I did not have brandy on hand so I used whiskey instead, and it was great. Will be making this one again and again.""

Very tasty, rich (not too much though) and very satisfying. I didn't have Almond milk but the 2% cows milk I had worked out perfectly along with the pumpkin puree I had placed in the freezer from the holidays. This is easy enough that I plan to fix it next time we go camping, and I know our group will love it too.""

Too sweet for my tastes, and I like sweet. I think it would be better with 1/2 the blue curacao. ""

That sure was easy, and really good. I don't like gritty sugar in my lemonade, so I went ahead and added the sugar as simple syrup. I will absolutely make this again and again. ""

Finally made this after saving the recipe. SO GOOD! Perfect combination of some sweet, salty and heat. Okay, so I put it on rolls because I forgot the radicchio, but this is a full on winner. I think next time (and I will make this again) I'll cook the eggplant first, put it aside, and then cook the rest of the ingredients as stated in that 1 pan."

Made this for the moms in my family for Mother's Day. Made it the day before just as the recipe says (Amaretto and all) a delicious hit. I will make this again, and since it held up so well making it the day before, I'm going to make it for our next picnic or camping trip. "

I loved this, but like others, I used a lot less mayo and pretty much reduced the dressing overall since I knew I wouldn't want it really wet. It's very tasty and fabulous and the leftovers are perfect the next day. I will be making this in advance for our next camping trip since it holds up so well. "
