"This is sooo good. I made this and put it under a grilled Talipia topped with a medley of corn, black beans, bell peppers, onions, tomatoes, cucumber and avocado. SO DELICIOUS!! "Very good. I used a salad spinner to dry the cauliflower. This is a delicous base recipe; there's a lot you can add to make this even better. I loved that it had a "decadent" feel to it. I felt almost like I had mashed potatoes but none of the guilt of cheating on my low-carb diet! Try it."

"This is out of this world delicious. I cut back on the oil and used canola oil instead of vegetable. I also added sliced water chestnuts, shredded carrots, a little bit of red cabbage and edamame because I love that extra crunch. Definitely a winner if you like a peanuty sauce!"

"Love this. The tomato basil cream sauce is to die for. Definitely doesn't need 3 cups though - I just eyeballed it. I used Marscopone cheese, not the ricotta. "I made this last night and it's so delicious. I added some old bay seasoning to the stew and also added plum san marzano tomatos. We omitted the squid and added haibut, mahi mahi, lobster and cod.
