I blended the onion in with the tomatoes as the texture of onion is not one i enjoy so that way i get the flavour and not the mouth feel. "Love these! I prepared the whole recipe and froze what I didn't cook in ziplocks. Instead of using the griddle I used my George Foreman to grill the fish with much success! I also subbed sour cream for the crema and just added some lime, hot sauce and pepper to it.
