I really enjoyed this recipe. I doubled it and served it at my group's annual Harvest Dinner, where everyone loved it. The addition of the cornbread mix created a great texture. I added some cumin to give it a slightly south-western flavor, which enhanced the corn taste. I used defrosted frozen corn and didn't notice any problems with texture....
