"I make twice-baked potatoes all the time, but after making this recipe, I will be making twice-baked potato casserole from now on! The flavors are delicious and it is easy to make. definitely endorse baking the potatoes in a traditionaloven. It makes all the difference to the flavor and texture of the potatoes. I made this a day in advance and refrigerated until an hour before I planned to serve it. Everyone raved about! I cut the recipe by a third, and it still filled a 13 x 9 baking dish. I

"I really enjoyed this recipe. I doubled it and served it at my group's annual Harvest Dinner, where everyone loved it. The addition of the cornbread mix created a great texture. I added some cumin to give it a slightly south-western flavor, which enhanced the corn taste. I used defrosted frozen corn and didn't notice any problems with texture. This is a recipe I will definitely make again.
