great basic recipe to modify according to what you have on hand. i used boneless instead of bone-in chops, dried rosemary in place of the sage, spinach and carmelized onions in place of the escarole and garlic, and kidney beans instead of cannelini. husband and 3 year old loved it! will definitely make again.
