My Activity

Reviewed Brussels Sprouts with Pecans and Cranberries

"Really enjoyed this one. Admittedly, I did not follow recipe to the "T". I added 3/4 lb crumbled bacon, 1/2 bacon grease and 1/2 butter for the oil portion, walnuts instead of pecans and splash of red wine vinegar just before serving. Everyone who normally doesn't like Brussels Sprouts was raving and going back for seconds. We ate it warm and freshly prepared for Thanksgiving day and cold as leftovers and both were very good. Just don't open the container in front of someone before trying to serve it to them or they will think you walked over and broke wind.

Reviewed Sweet Potato Cake

"While the texture wasn't quite cake-like, the flavor was outstanding. Would have been better if called something other than cake in my opinion . . . possibly Sweet Potato Bars with the same icing. I found it to be very dense and not light like traditional cake consistency. Despite its heavy texture, it was very moist and flavorful. The only possible problem I can think of for the outcome is maybe the method of cooking or done-ness of the sweet potatoes themselves. Maybe my potatoes weren't cooked soft enough.

Reviewed Southern Cornbread Stuffing

"This was pretty easy and tasted like my grandmother's. Could use further detail in preparing the white bread and crackers. I assumed that crumbling them were necessary, and did accordingly, but; the instructions were a bit ambiguous. Also, be careful when doubling . . . a double recipe would have called for 14 cups of broth/stock when 10 cups was almost too much for a double recipe. It ended up perfect, but I would add one can at a time until right consistency is achieved.

"Another good one. The family raved at Thanksgiving. Thanks Paula!
