OMG this is the BEST pork shoulder roast I have ever made. It was juicy and delicious.
I also combined another food network pork recipe for the crackling and potatoes you can find it under "Pork loin and Crackling with Hassel back potatoes" . I scored the fat and since I did not have garlic and oil I liberally added salt and a large amount...

this is the rest of my comment since I over done the 1000 strokes for the first part...
The Crackling sliced easily off the roast and I sat that on a piece of aluminum foil. I sliced the roast as it was in the roasting pan (since it was on the roasting rack it made it easier to slice, using a serrated knife the pork roast sliced wonderfully...
