Reviewed Aunt Peggy's Cucumber, Tomato and Onion Salad

"I made this for my husband to carry to work. Its very hot here and even hotter inside the plant where he works so I thought this would be a refreshing something for him to eat. Sometimes when its that hot, he doesn't want onions so I left them out. Since I had some fresh dill, I used that instead of the parsley. Thanks Paula! I always look to"

Reviewed Fennel and Cabbage Slaw

"OMG! This is the single most tasty slaw I have ever eaten!

The recipe calls for 1 c of purple cabbage...I didn't have that and I needed more slaw than that so I improvised. I used half a head of green cabbage and doubled everything else but the fennel. I was scared to add the extra fennel because I am trying to get my hubbie to like fennel.

Anyway--it is delicious and I think it is the dressing along with the bacon that really makes it a winner for me. The fennel adds a freshness but is not obvious so my husband will never even know it is in there and I'm certainly not telling him. :
