I make this recipe at least once a month. It is easy and delicious. I could have swore on the airing of the show, she butterflied the chicken breasts and pounded them out to be thin before coating them with the cheese. I loved this recipe. I followed the recipe other than I used baby spinach instead of escarole, and I used a mix of fontina, parmasean, asiago cheeses instead of just parm/reggiano.
The spinach was really good with the cheeses and pumpkin.
I usually do not like the texture of butternut squash, but in this recipe, with the grain...

BBQ sauce was excellent. I did cut the amount of chiles by half. I thought it was still spicy enough. I made a double batch of the BBQ sauce and used some on leftover pork roast with pineapple. Made unbelievable pulled BBQ pork.
I made the turkey meatloaves with all the ingredients listed in the recipe. I used parsley instead of cilantro....

Some of her variances to this recipe, she starts it off with pancetta, so I started with bacon. Other than that, I followed the recipe. Very easy. It was very good. She mentions to use the left overs as a hash with an egg which made me think it wouldn't be good heated up as a soup. My husband heated it up anyways and really enjoyed it as a soup. H"

I served this on onion buns open faced. I also used pickled vegetables but not the bread and butter pickles. This recipe was fantastic. Packed with flavor. The vinegar from the pickled vegetables adds a lot to the flavor profile. "
