Reviewed Mexican Squash with Yogurt Dip

"I tried this recipe because I was curious to try chayote. It's good! The dip is very light and refreshing. I didn't have any mayo and so only used yogurt in mine but it had a really nice taste with the pepper and avocado together. (I actually used a slightly hot pepper since that's what I had but I liked a bit of heat.) I'm sure with the mayo it would have an even creamier and richer texture and I would definitely try it again just as soon as I buy some! (And the chayote was good, too! - I'm stewing the leftover right now tomatoes per 2 Hot Tamales.)
