"I made this exactly as written and it came out perfectly! I am going to use the leftovers for a pate sandwich with bacon and tomato."

Reviewed Good Eats Roast Turkey

"I followed the recipe using a 12 pound turkey. It turned out perfectly. It was very easy. I am glad that I read the reviews about putting the water in the pan before putting it in the oven. it didn't smoke at all. The white meat was so moist compared to other turkey I have had. It is only the second turkey I have ever made. It is definitely a good one for a novice.
Clean up of the brine was easy. I bought a large brining bag at Bed Bath and Beyond and put the bag inside the bucket. I put the bucket inside a large tub of ice. That kept everything clean so I just had to dump the brine and throw away the bag.
