Reviewed Cauliflower Soup and Garlic and Cheese Sourdough "Dippers"

"I loved this as a way to eat more cauliflower. Easy and delicious. I left out the flour, and split the half and half with fat-free half and half to cut calories and carbs. Used dried thyme as no fresh on hand, but still great tasting! I added salt when reheating...was a little bland second day. Will definitely make again. "

Reviewed Eggplant Gratin

"I liked this as a veggie-based comfort food. I agree with other reviewers - DO NOT fry the eggplant in oil! It will be mush. I loved the flavor, however, so will definitely make again with either grilled or baked eggplant. (I also doubled the custard and mine easily served 4). I suppose the same recipe would also work with portobellos? "

Reviewed Cauliflower Sauce With Whole-Wheat Penne

"Good, and a nice light meal. I used half the cheese and left the garlic in. The "sauce" didn't really coat the noodles well at all, I might use spaghetti or linguini next time and add more stock. Other reviews suggest chicken, peas, red pepper flakes, etc. I think all would be good additions. Recipe makes at LEAST 6 servings, if not 8. "

Reviewed Szechuan Noodles with Chicken and Broccoli

"Enjoyed this. It does make a lot - I used brown rice noodles, and will maybe double the noodles next time. I found the sauce to be oily and wanted it to be sweeter, so will try cutting the veggie oil, adding balsamic vinegar in place of the sherry vinegar, and maybe more honey, too. Would also be good with more veggies - pea pods, blanched cabbage"

"I was disappointed with the lack of flavor in the pumpkin pudding. I tried to serve individually, but the pumpkin pudding was too gloppy...should definitely assemble in a trifle dish as instructed. "

Reviewed Cauliflower-Goat Cheese Gratin

"Easy, and pleased everyone at the table. I followed the reviews and instead of the cream, used 1/2 c. half and half for 1 1/2 times the cauliflower. I also stuck some leftover sprigs of fresh thyme in when roasting, which added a little flavor to the sauce, and were easily removed when serving. Will definitely make again. "
