You can cut the anchovy to two fillets if you don't want a strong taste. It is not fishy and it imparts a great flavor. I also put anchovy fillets in my stuffing for artichokes. Haven't yet tasted a better stuffed artichoke. It's an OLD italian recipe with grated romano or parmesan cheese and garlic mixed in with the bread crumbs. Also salt/pepper"

You are correct in stating that frying chicken in 300 degree oil just will not work. I would also fry it at 375 degrees. If you want real Southern Fried Chicken, add Lawry's Seasoned Salt to your flour and forget the cajun spice. Don't be too greedy with the Lawry's. Also, add hot sauce to your egg mixture. Best there is.""
