Reviewed Roast Beef with Spicy Parsley Tomato Sauce

I put the roast in a crockpot on low and it was soo tender it could not be sliced. I liked the flavor of the roast but didn't think the sauce was a good pairing. I made a gravy from the pan drippings that were left from searing the roast and served that instead with mashed potatoes. I will incorporate the sauce into something else."

I cooked it the full 45 min and then flipped it and cooked it an additional 45 min to brown and crisp the skin on both sides. I could do with or without the rice, but the chicken was fantastic! There were no leftovers!! No need to cover it...

Was a little unsure of this as it was simmering because it had such a strong aroma, and it had a bite to it when I tasted it, but put it on the chicken and basted it through out grilling and the flavor mellowed out really nicely. Chicken was great! Would definately make this again."

This made a whole lot of marinade, next time I would let the shrimp sit in it for a while instead of brushing it just before grilling. That being said, the shrimp were perfectly cooked and I had enough marinade left over for chicken the next day. Excellent marinade!!
