Fantastic recipe! I used a 2009 Columbia Crest Reserve Cabernet and Remy XO for the cognac - wow, what incredible flavor! I used a 6 lb roast and it turned out moist and the sauce was just perfect! Be sure to follow the directions carefully and don't deviate if you want the best pot roast you've ever tasted. I will definitely be making this again...
