I made this recipe after trekking through fresh, deep snow for 2 hours after a blizzard. I don't like gruyere so I did a mix of havarti and an emmenthal swiss. Loved it! The sherry is what really did it for me by really adding depth. I had forgotten to pick up heavy cream, but added mascarpone cheese instead which, of course, I now keep in the fridge all the time thanks to Food Network. So kudos Jeff and I just love your show! ""
