All I can say is - wow!!!! The prep time was a little more than Emeril indicated, but it was delicious! The Risotto came out perfect. Had to add a little more chicken stock and heavy cream because I made 3 cups. Will definitely make again.

I used honey wheat because I didn't have challah bread and no orange zest. It was delicious!! Kids and hubby asked for seconds and thirds. Went through the entire loaf!!"

Made this dish last night and followed recipe to the letter. It was phenomenal! All of my men had seconds. I spread the extra pesto on some freshly baked italian bread and served with pasta salad. Will definitely make this again!"

This recipe was awesome. Followed the ingredients to the letter, and grilled on both sides until done to perfection. Quick, simple and tasty. Served with rice pilaf and salad with honey mustard dressing, goat cheese, cran-raisons. Yum! Definitely a keeper!"
