Reviewed Mini Spicy Shrimp Salad Sandwiches

"Since I chose to make these at the last minute, I didn't have everything, but this is such a great recipe that it can stand up to being used as a springboard! No jalapeno seeds for us, but a freshly picked jalapeno with great flavor and the perfect amount of heat made this taste great. Having a jar of commercial Balsamic Onion Jam in the cupboard ""

About Me

Cooking and baking are two ways I indulge my engineering mentality to create something and to solve problems simultaneously. I love to do complex baking of desserts and food for large groups. What gets me is the mundane daily dinner cooking -- ugh! I also sew and do handcrafts for the same two reasons. I have hopped in and out of an assortment of job-jobs after leaving engineering to be a mom and follow dh's military assignments. Now we are settled, he's retired, and the kids are all mid-teens at least. Soon my new challenge will be mundane dinners for two!

I have about 150 cookbooks and I not only cook from them occasionally, I read them from cover to cover -- love to learn, love to dream. My 2007 menu planning method is to pick 4 of the more obscure ones each week and make a recipe from each.

My favorite cookbooks are:
Glorious Chocolate from Chocolatier Magazine editors
The Cake Bible by Rose Levy Berenbaum
BH&G cookbook and Betty Crocker
The Seattle Classic Cookbook copyright 1983
Pacific Northwest Palate
The Southern Heriate Cookbook Library from Southern Living Magazine (with a master index!)
Sunset Magazine recipes.

Favorite Foods

Sweets -- what kind totally depends on the whim of the moment. Other specifics: Panda Express Eggplant and Tofu after it has been sitting in the warming tray for a while; homemade grain pancakes; double tall nonfat lattes with a touch of sugar; salad with LOTS of veggies; veggies in general, especially when someone else prepares them LOL!
