Reviewed Quinoa Pilaf with Pine Nuts
"Here's another great Ellie recipe that just lends itself to improvisation. I made a double batch of the quinoa, divided it into six one-cup portions and stashed some in the freezer. Then I proceeded to experiment with different combinations of nuts, herbs & dried fruit. Here are some of my favorite combos: pine nuts-cherries-basil, almonds-apricots-parsley, pistachios-raisins-parsley, pecans-cranberries-cilantro. I happen to love Trader Joe's for their prices, and they have dried fruit without added sugar, and pre-chopped roasted nuts. "
