"This carrot cake is delicious. I more than doubled up on the amount of spices in my cake though since that's where the flavor really comes from. I cooked mine to the internal temp that he mentions in the recipe and it came out moist and delicious. The frosting was a bit strange. It needed several minutes of whipping so it could get light and fluffy.

"I made this for an appetizer for guests and they loved it. It was delicious with a glass of Pinot Noir. I will be making this again for my holiday party. I did not have a mini springofrm so I just doubled the recipe and used the standard size.
