My Activity
Reviewed Pumpkin Cream Pie
"Wow! This was the best pumpkin pie I have ever eaten. The pumpkin was very creamy, and the whip cream with the pumpkin pie spice in it was a great touch. I made it a week before Thanksgiving following the recipe exactly to make sure it would be perfect. For Thanksgiving, I followed some reviewers advice by using the whole 8 oz of cream cheese and added a little more brown sugar. It was perfect - not to sweet and very light and creamy. This will be the new recipe I follow any time I make a pumpkin pie!
Reviewed Potatoes au Gratin
"This was an easy recipe to follow and delicious. I followed the advice of many reviewers and cooked it for 30 min. I also added cheese to the sauce, more salt, and a small can of mild green chiles to replicate a recipe at one of my favorite restaurants. It turned out great and I will definitely make it many, many times again.
Reviewed Quick Jalapeno Corn Bread
"I would add a bit of sugar to the recipe and more moisture (milk and/or butter). The jalapenos were nice and the recipe was fast and easy, but a little flavorless and dry. They were perfect for my cornbread stuffing though, but alone, not so much.
Reviewed Spanish Pork Chops with Linguica Corn Stuffing and Cherry-Rioja Gravy
"The pork chops were vey tender and the cherry sauce made it even better! My chops were about 1/2" thick so I adjusted the time in the oven to 6 minutes and they were cooked through but still tender. The chorizo corn stuffing was delicious, I too added less beef stock (about 3/4 cup) and the texture was perfect, not too mushy. I did not add wine to the gravy and I don't think it was lacking anything. I will definitely make these again, and pass on the recipe.
