"The complexity of the flavor and textures made for a wonderful meal. Yes, the sauce was too thin. I will try the flour trick next time. Yes, the time was more than was billed, but I will be able to significantly reduce that next time by prepping the onion, mushrooms, and spinach the night before. I cant wait to make this again!

"The flavors melt together for a wonderful fall meal. While brining the pork chops would have made them more moist, it would have added time to the preparation. So in that respect, you get what you put it. I had a difficult time "crumbling" my goat cheese log and it ended up being more of a spread, which only mattered for presentation purposes. Ultimately, very delicious flavors and the results are appropriate for the required time and effort.
Reviewed Penne with Spinach Sauce
"The beauty of this dish is also its beast. Its uncomplicated and minimal essence leaves you with a dish that is quick and easy, but you are aware of that with the similarity in every bite. Paring this with a flavorful bruschetta topped with brie is a good way to elevate the flavor of the plate. Otherwise, standing alone this is great for lunch or a meal for the kids.

"The flavors in this dish are sophisticated and complimentary. As I expected when reading the recipe initially, I used far more than the 1 1/2 cups of stock that the recipe called for; closer to 5 cups (maybe I did something wrong?) The pears do an amazing job at adding sweetness to the pungent taste of blue cheese. That said, if you dont like blue cheese, you probably won't be a fan of this dish. The bread was delicious, but its still unclear to me why the recipe calls for only quartering the onion. I feel like I could have save alot of energy is the "mash" step had the pieces been smaller. I may add another half of pear next time I make this...

"I gave this 5 stars because the final product is fabulous. That said, the recipe must be skipping a step about putting water into the saucepan with the carrots. If you dont, it takes FOREVER for them to soften. Also, I suggest using greek yogurt to enhance the creamy factor.
