Truly the best pancake I have ever eaten & certainly ever made. Very light & fluffy. Worth the effort which really isn't that much or that difficult. No more box mix for me. I put the egg whites in my stand mixer & let them whip while I put together the rest of the batter. Awesome!

These are fantastic! I have made these a few times. Always great. Most recently I changed them up a bit to suit myself & what I had on hand. Used a whole egg. I only made the frosting to use on cupcakes from a devils food box mix. Sorry Ina, it's just way easier. Anyway, while the frosting tasted good it was way to soft. Even after I let it set & put it in the fridge. It just would not hold the shape of a star tip. I made Gale Gand's quick vanilla buttercream frosting also and it piped thru the star...

This recipe is wonderful. You only need to dip one side of the ladyfingers in the expresso mix for only 3 seconds literally. Or they will fall apart. I like that it's not too sweet. I do mix 2 tbls cocoa & 2 tbls cinnamon to sprinkle on top. This recipe makes great single servings if you layer them in martini glasses. Very romantic & festive....
