I only made the falafel, not the white bean sauce. They were delicious. As per another reviewer's recommendation, I also baked them at 400F instead of frying and they turned out perfect. I used the 1/3 cup flour and then sprinkled more into the batter before baking. Probably about another 1/3 cup total. No issues with batter consistency or flavor.

No, it's supposed to be a creamy, uniform texture. I've had the same problem in the past and found it's a result of the butter being too cold and not creaming together well with the sugar. For the record, I made only the pork chops. The pork is great, but the gravy is too sweet. I even added more chicken stock to try and balance it out. I would add only a teaspoon of brown sugar, if any, to the gravy. Also, if you cover your pan while carmelizing the onions, they carmelize in about 12-15 minutes instead of 20.
