"Love Love Love this meatloaf. I was never a meatloaf fan as a kid but now I always have some in my freezer. When I make this I triple the recipe and freeze the individual loaves, so all I have to do is pull out a couple and defrost for dinner. One time chopping and mixing and I have several meals."

"I couldn't find chorizo in my grocery store so I substituted keilbasa and it was yummy. I think you could definitly make adjustments to this to suit your personal tastes. Add corn or black beans if you like.
