Excellent raita. For the person who can not use cucumbers, try Armenian "cucumber" (Cucumis melo var. flexuosus.) This actually a variety of muskmelon. I grow them in my garden and use them in any cucumber recipe -- including pickles. They're easier to grow and never get bitter."

I leave milk out on the counter for a few days to sour as my Irish gradnma did, rather than use buttermilk. I checked with a few bakers I know who were raised "on the other side" and this is also their method. I liked it with the buttermilk, but the sour milk works and tastes better to me. I agree with the other reviewers, excellent recipe! Although the initial $ investment is quite a bit, it makes so much, it's really not expensive per serving. If you'd like to save a bit more, two suggestions:
