My Activity

Reviewed Skirt Steak with Chimichurri Sauce

"The steak is great but the star is the sauce...made various versions of Chimichurri but I think this is one of the best. Could eat it on anything or with any thing."

Reviewed Blackberry Cobbler

"I'm not sure this is really a cobbler but what ever you call it, it's delicious and ridiculously easy. I had fresh blueberries so I used them and served with fresh whipped cream and more blueberries. Got lots of compliments. Can't wait to try it with other fruits. "

Reviewed Eggplant Casserole

"I really liked this although I did modify it slightly. I added only half of the breadcrumbs and half of the Parmesan. Rather than finish it in the oven I continued to cook it on the stove adding more liquid and stirring leaving the vegetables in a creamy sauce. Served it over a lemon-chive pasta as a great main dish.""

Reviewed Chipotle Shrimp Taco with Avocado Salsa Verde

"Really easy and really good. I used some salsa verde with the avocado and it turned out great. I also used flour tortillas because I don't care for corn. The shrimp was amazing!!! "

Reviewed Vietnamese Noodle Soup

"This soup was really good...actually combined recipes using this as a base but added seasonings from a David Tanis cookbook. Slightly less star anise with some fennel, coriander and cardamom seeds. Couldn't stop eating it."

Reviewed Beer, Ginger, and Garlic Braised Brisket

"I made this with a chuck roast and thought it was pretty good. The cooking liquid seemed a little bitter (could have been the beer I used) so I added a little more sugar. I also added some potatoes and carrots at the end to make it more like a beer, ginger and garlic pot roast. My husband loved it and I will make it again"

Reviewed Eggplant Rollatini

"I think this is really delicious...not to filling but really hearty. I made a half recipe and the only problem is the filling is not ready after 15 min. in the oven. Baked it another 10 min. and it helped the filling set up. I'll be serving this for a luncheon in a couple of weeks...a keeper"
