Great dish. In answer to the question regarding alcohol -- it is not necessary. It is only to intensify the raspberry flavor. I don't suppose they used liquor when it was served at Eton college.

In answer to Gluten Free Dairy -- Cups are not always equal to weight. In this instance 3 cups dry measurement are approximately equal to 8 oz of weight. A pound feathers may weigh the same as a pound of iron but a cup of feathers does not.

I have made this many times and enjoy it immensely. My only deviation being since I don't have any Pernod I use Sambucca. It is also anise flavored and more readily found in my liquor cabinet. Might try using one star anise next time I make it.

The sauce is great over noodles."
