Reviewed Toasted Israeli Couscous with Vegetables and Lemon-Balsamic Vinaigrette

Followed the recipe completely - loved it. We ate it as a main entree (no leftovers between the 2 of us!) - next time we'll add some tofu to it for protein. Great flavors, and easy to make.
