Reviewed Spinach Stuffed Zucchini
"I really departed from the recipe but the results were still fabulous. Used Italian bread crumbs instead of stuffing. Grated carrot, sauteed onions and a squirt of anchovie paste. Used both parmesan and mozarella. I will do this again. Thought about using fresh cubed tomatoes. Maybe next time. YUM!!"
"I made this for Memorial Day. Had my grandaughter helping. I sprayed the pan, still stuck. Bread was a little hard to cut. Flavor was good, especially when served with homemade vanilla ice cream. I think it could have used more banana."
