Reviewed Roasted Eggplant Spread

"I thought that the spread was good. My only problem is the minced garlic burned while in the oven and I could taste that bitterness in the dip. I don't know how to resolve that issue since you have to bake it for 45 mins in a 400 degree oven. But, other than that, its a good recipe."

Reviewed Coconut Cream Pie

"I made this last night and it was a huge hit! It is my mother's favorite pie and she said it is the best she has ever had! I did take the suggestion of adding another egg white and a shot of coconut rum to the meringue. I will definitely be making this again!""
