Reviewed Roasted Vegetable Soup
"The roast veggies are simple and delicious, but the soup was lacking. I added 4 shallots and 4 cloves of garlic, but there still wasn't enough flavor for me. I definitely enjoyed the soup, but it wasn't a home run.
Reviewed Meatless Shepherd's Pie with Horseradish-Cheddar Potatoes
"Like others, I found that the recipe called for too much stock. I only added 1 1/2 cups, and still had to do a second batch of the roux. The recipe took a long time, but was still fun to make.
I loved the mashed potatoes, and the flavor was great for the mushrooms. I added extra mushrooms, using 5 medium portobello caps/ 1 large package of white mushrooms/ 1 s small package of baby portobellos/ 1 small package of creminis. I will probably add more vegetables next time.
Great vegetarian recipe that feels like a total meal, and not just a side! I look forward to adapting it on my own.

"Loved this recipe. As per another reader's comment, I roasted two bunches of asparagus in the oven with olive oil and S&P-- this was a tasty addition that went well with the recipe and added more veggies. Be sure to have the water boiling while you make the sauce, I had to add extra wine and stock while I was waiting for my pasta to cook.
