Best posole ever!!! I varied a little bit.
1)used leftover roasted duck carcass, meat pieces separated from body. Boiled it in 2 quarts organic vege broth
2) added 1 cup wild rice (dont add too much, it will thicken to stew consistency
3)used turkey bacon...i know sacrilegious

I ommitted the mint, feta and the last 1 tspn of butter... substituted red onion for shallot and added raisins the last few minutes...its worked out great! nice simple yummy couscous... I also used the middle eastern pearl couscous instead of fine... its was gerat!"

It was great! I made a few changes:

Added a little honey to the dressing
Substituted Pine nuts for walnuts
Finely diced the red onion
Added spinach and onion to the pot to wilt and collect some flavor
Added the pasta/nuts and vinaigrette, turned heat off and mixed ingredients

Great...
