"It's absolutely fabulous! My husband, who is not a vegetable eater, loved it. I make it much less in calories by using extra virgin olive oil. And if any is leftover, if that ever happens, I put them in a pot with chicken broth and turn it into butternut squash soup using the immersion blender. Add any spices that you think might help."
