Reviewed Eggplant Parmigiana

Great recipe...all the flavor of traditional parmigiana but lighter and easier. I peeled and sliced the eggplant into 1/2" rounds and cooked them on a baking sheet on parchment paper with just cooking spray. They browned nicely without sticking. I also sprinkled some panko on top for some crunch. Excellent!"
