Lots of prep, although very easy prep. Used 3/4 of a jalepeno, AND 1/2 teaspoon cayenne pepper, AND about 15 shakes of hot sauce, as our family loves spicy. I followed the directions to the letter. I let it marinate for 2.5 hours. I thought the herbs and wine overtook the taste of the pork. It was tender and flavorful, you just couldn't taste the pork. It was VERY easy.

I omitted the avocados, served it in a martini glass with crispy baked wonton triangles.
I served it as a first course at a sit down dinner party for 12.
EVERYONE asked for the recipe, including a guest who swore he didn't like "raw" fish. "

After browning the ribs, I used the crock pot and cooked them for 5 hours....unbelievably rich, tender and falling off the bone. The filling required more milk and cream than the recipe called for, I just eyeballed it...maybe a quarter cup more of each. I served it at a small dinner party, and got RAVES! No leftovers.
